CoDiet hosts panel in Cork to explore how AI can improve health outcomes

On the 19th of February, the CoDiet project along with partner Teagasc, the Irish Agriculture and Food Development Authority and APC Microbiome Ireland, a Research Ireland centre at University College Cork hosted an in-person panel event, ‘Harnessing AI for Better Health’.

The event brought together a distinguished panel of experts, both from within and external to the CoDiet project, to discuss the potential societal benefits of the initiative. The panel was expertly facilitated by Andrea Doolan, CEO of Atlantia Clinical Trials, who will be leading the upcoming interventional trial in Cork. The panel included:

  • Prof. Gary Frost – Head of Section for Nutrition Research at Imperial College London and Scientific Lead for CoDiet
  • Dr. Itziar Tueros – Head of the Food and Health Department at AZTI and Project Coordinator for CoDiet
  • Prof. Orla O’Sullivan – Senior Computational Biologist at Teagasc – the Agriculture and Food Development Authority, and Principal Investigator with VistaMilk and APC Microbiome Ireland, a Research Ireland centre
  • Prof. Noel Caplice – Principal Investigator with APC, Professor of Cardiovascular Sciences in the Department of Medicine and Director of the Centre for Research in Vascular Biology at University College Cork and a Consultant Cardiologist at Cork University Hospital
  • Dr. Adrian Rubio-Solis – Research Associate in Sensing and Machine Learning at Imperial College London

Despite the rainy weather, over 45 attendees came together to gain insights from the panel on how the CoDiet project seeks to bridge the gap between diet and disease. The discussion offered a deeper understanding of how the smart camera is being utilised in the clinical trial, the critical link between the food we consume and the development of non-communicable diseases (NCDs), and the potential long-term impact a project like CoDiet could have in promoting healthier outcomes for society as a whole.

The event also served as a precursor to the consortium’s 2nd Annual Meeting taking place in Cork on the 20-21st of February, you can read more about how the meeting went here.

The project received coverage from Irish media outlets, including the Irish Examiner, Tech Central and the Cork Independent.
